Puebla creativity in the cuisine seems limitless. Besides chile in walnut sauce and mole poblano, the flagship dishes of the city of Puebla, the rich gastronomy of the state affords you delicious discoveries.

The regional cuisine has many shades as landscapes. In Cholula, try the cholulteca soup, pork rinds or punch made with blue corn. Traditional dishes of the Sierra are many, like the  tlayoyos, smoked meats, trout in Xicotepec and Tlatlauquitepec or serrano Itacates. In the Valley of Atlixco beef is prepared in delicious sausages, belly mole, Mole de Olla and barbecue. In Tehuacan the tlatapas traditional mole de caderas and mole of Chito (Dry meat with chili) are cooked. The breads have a special place in Puebla's cuisine: dead breads, breads, cheese or bread of Zacatlán Pan de Burro (donkey bread) in Tehuacan.

From the kitchens of the convents of o del Templo yr theconvento de Santa Mónica Seeoand de lasDe lasofocinas de los Lord Wonderland  came a myriad of sweet  treats such as sweet potatoes, jamoncillos, weaklings, jamoncillos, coconut candies and marzipan. In the Sierra you will find crystallized candies, canned apple, hawthorn or quince jellies, typical candies made of pinion and delicious passion fruit ice cream.

Drinks are quintessential ciders, made in Zacatlán of Apples and Huejotzingo, but also the liquors of all kinds of fruits like orange, plum and raisin and wine Tlatlauquitepec. Also try eggnog and liquors as chumiate. And do not forget to finish the meal, the delicious coffee Sierra.
